In 1929, a group of eight local businessmen came together to by molasses in bulk and control the distillation process for their rums. They would establish their own distillery four years later. They would use a 4 column copper Savalle still from from for the distilling process. They would replace this with a new cooper still in 1991. The decision to stay with copper over stainless steel is important as copper contributes to the flavour and aging of the rum.
