A sparkling rosé with the seriousness of Champagne. This is a very special bottle, with enough age on it to show off its incredible complexity and ethereal fruit quality. Drink now or cellar, but save it for a special moment, like ordering takeout to a park!
Vinification: Traditional method Chardonnay and Pinot Noir. Aged on lees for 12 years (!), zero dosage. tasting Notes: Very restrained nose, with dried flowers and red fruit, but an explosion on the palate, with dark and tart red fruit, and a finish of butter and dried flowers.
Food: Anything from sushi to duck confit, this could cut through a fatty dish or float on top of something delicate and complex.
Cellaring: This will last at least six more years in a cellar.
