BRUT PREMIER CRU, FREREJEAN FRERES, CHAMPAGNE, FRANCE
The official champagne of the “Michelin Guide France”. In the heart of Cote des Blancs and in the middle of magical cold and chalky-soil filled landscape the Maison produces this Brut NV Premier Cru, a classic Blend of 50% Pinot Noir and 50% Chardonnay that spends 5 years on lees in their cellar before bottling. Soft mousse with notes of baked and dried apples, honey and almonds on the nose, brioche, honey and white peach on the palate. This wine could be enjoined as an aperitif, pasta and risotto medium structured, cured meat, fresh cheese with sweet trend as “crescenza” and mozzarella.
Food Pairings: This champagne can be enjoyed simply as an aperitif, or with a Risotto, as well as some aged Iberico Ham.
Tasting notes: Soft mousse with a much broader and fuller texture than most Champagnes. Baked and dried apples, honey and almonds on the nose, with brioche, honey and white peach on the palate.

Tasting notes: Light yellow colour, typical of Chablis. Aromas of mineral and lemons. Shows a great fusion of lushness and freshness enhancing an already expressive array of aromas with a warm finish

LES ENFANTS TERRIBLES ZINFANDEL, DASHE CELLARS, 2017, MENDOCINO, CALIFORINA
Coming from a very special appellation in Mendocino, "Mendocino Ridge", the highest peak in the county and the only AVA based on elevation. The steep rocky slopes make for complex, old-world style wines, here made in a style paying homage to Cru-Beaujolais.Vinification: 100% Zinfandel from Mendocino. 15% whole cluster fermentation on native yeast, in stainless steel, with one week maceration.
Tasting Notes: Pale ruby robe with a violet rim. Raspberries, cranberries, and white pepper on the nose and a lovely, very Gamay-like burst of raspberry and dark plum on the palate. Fantastic velvet texture and a long red-fruit dominated finish.
Food: Roast chicken, pan fried mushrooms, hot dogs, cheese and charcuterie.
