Châteauneuf-du-Pape DOC
Châteauneuf-du-Pape DOC

An excellent, certified organic wine.  Large in density and quality of the fruit, and through the slightly higher ratio of Syrah, which gives this wine its denser texture, grippier tannins, and darker profile.
Vinification: 70% Grenache, 30% Syrah, fully destemmed and vatted on skins for a month before neutral vessel aging for a year.
Tasting Notes: Purple robe with ruby glints around the edges. Raspberries and black cherries on the nose along with a touch of smoke and white pepper, lovely long finish.
Food: Braised or grilled beef, mushrooms, hearty potato dishes.
Cellaring: Will cellar comfortably for 7-8 years.
