Crushable Bordeaux is rare, but this is it: elegant and plush, but above all, an immediately drinkable red. This is an elevated table wine that doesn't scream "Bordeaux," but shows off its excellence through subtlety and balance.
Vinification: 100% Organic grapes. 60% Merlot, 40% Cabernet Sauvignon. Fermented and aged in stainless steel.
Tasting Notes: Dark ruby robe, with ripe and tart fruit on the nose and a long and velvety mid-palate with an integrated finish. This is everyday wine, but a very good wine.
Food: Red meat, especially lamb, but also most hearty mushroom dishes. and most grains.
Cellaring: Ideally drink now, but could cellar for up to three years.

2 bottles of Clos Sorian IGP Pays D’OC, 2011, PROVIN, LANGUDEOC, FRANCE

Coming from one of the largest and most important of the IGP growing areas in France, located in Languedoc, this is a French wine that reminds us that it is made closer to Barcelona than Paris. Bright and vibrant Mediterranean fruit with lovely garrigue and balsamic notes that sing with a huge variety of foods.
vinification: 80% Merlot, 20% Grenache from 35 year old vines in Languedoc, hand picked, cold fermented and aged in neutral oak for a year.
Tasting Notes: Garnet robe with dried herbs and balsamic shading into black and pepper and nutmeg on the nose. Dense ripe red fruit on the initial palate finishing with fresher fruit alongside the beginnings of some development: the deeper herbal flavours that have emerged with age.
Food: This is a very flexible food wine, excellent with pasta and most meat dishes, but with decanting and a slight chill able to match grilled fish or even raw tuna.
Cellaring: Great now, especially with a bit of a decant, will cellar comfortably for five to seven years.
