Labour Day CB Butcher Box - Big Wines and Bone-in Meats
While we always provide potential wine pairings for our Butcher Boxes, this month we have decided to let the wines take the lead. We have picked two deep and dark, but fantastically priced red wines, one from California, and one from Italy, and then chose cuts of meat we think would go well with the wines. The first wine is “Naughty Racy”, an eclectic and unusual blend of Cabernet Sauvignon, Zinfandel, Cabernet Franc and Merlot from Reynolds Winery in Napa. While this might seem like a straight-up steak wine, as Cab Sauv is dominant in the nicely oaked blend, this wine really sings with pork and veal on the grill. Your wine pack will come with two bottles of Naughty Racy, perfect for the two Frenched Provimi Veal Chops or the two Frenched Pork Chops we are shipping. The second wine is a Cabernet Sauvignon from the Maremma Coast in Tuscany, from one of our favourite producers, Mocali. With a distinct Italian twist on the classic Cab Sauv profile, this is a wine made for drinking with bone-in beef cooked on a grill. To accompany the two bottles of Mocali, we are shipping one 45oz Dry Aged U.S. Angus Long Bone Rib Steak and one 32 oz Canadian Angus Bone Frenched Cowboy Steak. These are both huge, deeply flavourful cuts perfect for this amazing wine. We hope you have a great Labour Day and enjoy some outdoor cooking with these unique wines and great cuts of meat.
1 x 45oz Dry-Aged U.S. Angus Long Bone Steak. From US Prime steak from Denison, Iowa, this huge and dramatic looking long-bone cut is from beef wet-aged for 40 days followed by 30 days of dry aging for superior texture and a deep flavour. Cook on a grill, serve with Cab Sauv.
1 x 32oz Canadian Angus Bone-in Frenched Cowboy Steak. From Black Diamond, Alberta, this cut is made for fire cooking, with a beautiful frenched bone and fantastic marbling from grain-fed and finished beef.
2 x 14-16oz Milk-fed Veal Chops from the Rack. From Cookstown, Ontario, this local veal is incredibly tender, with flavour that needs a nuanced wine like the Reynolds blend. Works great on the grill or in a pan. Finish with butter and herbs.
2 x 14-16oz Frenched Center Cut Pork Chops. From Arthur Ontario, these loin chops come from Duroc pork and, like the veal, have a tender texture and great marbling. Pan cook all the way or sear and finish in the oven. Beautiful with the “Naughty Racy”.
2 x Bottles 2018 ‘Mocali’ Cabernet Sauvignon from Mocali. This is a big wine from the Maremma coast in Tuscany. Aged for six months in Barrique, it is dense with typical Cab Sauv fruit, but it also has subtle black truffle, violet and mint notes that set it apart from its California and Bordeaux relatives, giving it a distinctly Italian feel. Great tannins and a long finish make it perfect for serious steak.2 x bottles NV ‘Naughty Racy’ From Reynolds Winery. This idiosyncratic blend of 50% Cabernet Sauvignon, 20% Zinfandel, 20% Cabernet Franc and 10% Merlot is fermented in stainless steel tanks followed by a year in a mix of 90% French Oak and 10% American Oak. It has a nuanced and complex nose of fruit spice and cedar and a variegated palate that shifts from fruit to green and back. Made for softer flavours off the grill or pan, perfect with pork and veal.
